Antipasto Kebabs

I made some antipasto kebabs one day, just to change things up a bit in the salad department and they were really good!  Definitely will make again.  I used an online recipe as a guideline only, and used my own stuff & dressing.

For the marinade/dressing, I used Good Seasons Italian dressing.  I also used salami, mozzarella balls, grape tomatoes cut in half, extra large black olives, red onion, cucumber and cooked cheese tortellini.  If I could have found canned button mushrooms, those would have been used too but the grocery store didn't have any.  Next time I make this I'll also add artichoke hearts and red bell peppers.

  1. Yummy! I literally just made antipasto salad the other day. I haven't made it in years. Most of the family liked it but we all agreed the dressing I used was a bit over powering. I used zesty Italian.

    1. i think the recipe called for a vinaigrette, which I like, but I figured for a first time I'd use something that we both know we like. It also called for pepperoni and green olives but we're both trying to cut down on sodium so I only used the salami.

    1. Russell was surprised when I presented him with a plate of them instead of a salad but he scarfed them down so I consider that a success. lol So many possibilities for these!

  3. Love fresh verges this way... Fresh mushrooms are also perfect "stoppers" at each end! Looks yummy!

    That looks enticing under normal circumstances. Unfortunately, I've been rather ill over the last few days. Oh how I wish I could enjoy such food. Maybe tomorrow :)
